Default Changing Gender?

I am very curious about something. When I bought my last female long fin platy, I told the guy at the store that I have three females and he said that sometimes if you have too many females, one will change into a male. Is this true? Are fish born with both male and female parts and is it a hormonal thing? Just curious.
